Scallops... Chef Peter Fischbach
     The dockside seafood cooking show,  Hookin' & Cookin' presented by Viking Village, starts off with "The Art of Cooking the Scallop."  Renowned Chef Peter Fischbach explains and exhibits the proper way to handle these delicious morsels of white meat from the wild Atlantic scallop.
Monkfish Bouillabaisse... Chef Chris Sanchez
     Chef Chris Sanchez of 'Black-Eyed Susan's Cafe' in Harvey Cedars, New Jersey combines his talent and fresh monkfish from Viking Village to make a delicious dish. In regions of France, Spain and Portugal the locals make a great fisherman's stew called "bouillabaise."  Chef Chris prepares an eclectic array to supplement monkfish, the fish they call 'poor man's' lobster. 
Swordfish Grilled... Chef Charles Ostergren                                                       North Atlantic Swordfish stocks have rebounded and are currently at healthy population levels. Our seafood show visits 'Off the Hook'  in Barnegat Light where our featured chef Charles Ostergren prepares this delicious billfish. We have interwoven comments by a number of experts from the Swordfish fishery.
Skate & Italian Pasta... Chef Fred Madonna                                                        Chef Fred Madonna's Italian style home kitchen is a perfect setting to create an interesting dish with winter skate. Fred's international experience with sauces adds a beautiful blend to this cousin of the sting ray family. 
Fried Flounder Sandwich ... Chef Bill Smith                                                        Our featured chef is Bill Smith of 'Mustache Bills' situated in Barnegat Light, New Jersey. Bill had the honor to win The 2009 James Beard Foundation Award, "The American Classic."  We travel out to sea with Captain Tim Brindley on the Viking Rose dragging for flounder and then we rush right into Bill's kitchen where he makes a basic flounder sandwich.       
Tilefish Puttanesca...  Chef John Grifo
     Chef Grifo's Puttannesca sauce on tilefish is innovative and a big hit. In regard to the golden tilefish which the chef bakes to perfection, Barnegat Light, New Jersey was known as "The Tilefish Capital of the World." This beautiful fish was overfished after a decade but has bounced back incredibly.
Mahi Mahi  Blackened... Chef John Grifo                                                                   Featured Chef John Grifo prepares his Blackened Mahi Mahi with Mango Salsa over Baby Arugula. What John does with this delicious pelagic white fish is definitely mouthwatering. This dish captures the exciting West Indian flavors of the Caribbean.
Black Sea Bass w/ Vegetables... Chef Francis Pons                                             A French chef in an Italian restaurant?  We have one here on Long Beach Island and the result is delicious cuisine. Chef Francis Pons of 'A Little Bite of Italy' in Surf City, NJ, takes us behind the scenes as he prepares  Black Sea Bass in the french manner. 
Bluefish Grilled and Sauteed... Chef Charles Ostergren  
     Chef Ostergren of  'Off the Hook' Seafood Take-out of Barnegat Light, NJ, broils and sautees Bluefish to make delcious dishes with this local, freshly caught species. Chef Chuck performs a simple little recipe and hits a grand slam...capturing the great taste of this largely misunderstood fish.

     Watch as our featured chef prepares this delicious summer salad with seared Bigeye Tuna. This video also includes scenes featuring Chris selecting tuna and chatting with fishermen at Viking Village.

     This month we once again feature french chef Francis Pons preparing freshly caught Croaker in his 'Little Bite of Italy' Restaurant. This is a very interesting presentation and quite delicicious according to our videographer, Dave Kaltenbach.
